I'm 29 years old, 6,2ft tall (190cm) and I hover around 203lbs (92,5kg).
I really want to get into road cycling.
I've been lifting pretty heavy in the gym over the past few years so I'm not exactly slender.
My joints in my wrists are starting to wear off a little and I honestly don't have much fun going to the gym anymore. It's all become little dull.

I got into a local bike shop a and told them what my aspirations are aka road biking, riding on tarmac, etc.

The employee got really excited and seemed to know what he was talking about. I also visited this page for options. Employee proposed that I invest in a Orbea Terra H30-D because of my height and weight.
Reason being that I would break everything on a road bike and I was just simply to heavy. With all the "going out of the saddle" and everything.

I don't mind the price, I'm willing to spend 2k on a bike.

You're not much heavier than me and you'd be fine, you won't break anything on your bike because of your weight - maybe if over 100kg it might be something to consider. 

That bike is a decent suggestion.  It's a 'gravel' bike which basically means a drop bar Roadie that has the possibility to do some light off-road work.  Usually with slightly fatter/knobblier tyres and a more relaxed riding position than your standard Roadie.  Gives you the option of doing the occaisonal fire-road track in the plantations or the Old Douglas - Peel railway line.

Why not invest in an e-bike. You can go anywhere on it and laugh at hills

Ah but then you have the internal conflict of, am i doing this for fun or fitness?

I've seen studies that actually suggest it's pretty similar.  If an e-biker is really going for it, they'll burn off a similar amount of calories etc but do at least twice the actual distance.  But if you dawdle, not so much.

Some of the downhill mountain bike boys are really into them, it's basically a ski lift. 

My next bike will probably be E, just a few years away from biting that bullet and fully embracing middle age.

a guy at work sold me his fully tricked out Anthem a few years ago and I had/still have fun out on it. The e-bike however is a game changer. I thought even at my age I was too young for an e-bike. It was only when the guys at Bikestyle explained that even the pro's use e-bike did I decide to get one

Ah, but you can also just rely on a friend who has an e-bike to tow you up too.  Tried it out in Cringle a few months ago.  Surfboard leash worked well due to the stretch.  It was hilarious though, getting started is tricky, but once you're rolling, it's all good.
