oh how i long for the day when top tucker was various animals lips and orifices, with a pud of rendered lambs testicles,

It's now packaged in a plastic slab or in an earthenware pot and is called "smooth pate"

 

It cost four times as much but still tastes of pig piss

 

It is safe to assume your restaurant doesn't specialise in charcuterie then? Never having sampled porcine urine I can't be sure of your comparison, but a well prepared liver sausage is delicious. I have my own recipe of course but it is still available commercially. It isn't smooth pate packaged as you say, it wouldn't be a sausage if that was true.
